Responsibility

  • Lead daily production of pastries, tarts, chocolates, viennoiserie, and breads with a focus on quality, consistency, and waste reduction.
  • Develop and optimize recipes, scaling processes for high-volume output while preserving flavor and texture.
  • Manage inventory, ordering, and budgeting for pastry operations.
  • Train, supervise, and schedule a team of bakers and apprentices; uphold cleanliness and safety standards.
  • Ensure compliance with HACCP and local health regulations; maintain accurate records and logs.
  • Collaborate with the Head Baker on seasonal menu planning and product launches.
  • Maintain equipment maintenance schedules and troubleshoot production issues.

Qualification

  • Minimum 5 years of professional pastry/bakery experience, with leadership responsibilities in a bakery or cafe.
