Join Heritage Kitchen Collective in Lyon to lead authentic Lyonnais and French regional cuisine. We are seeking a dedicated Traditional Cuisine Chef to guide a skilled culinary team, craft memorable menus, and maintain the highest standards of quality and hospitality.
This premium role combines mastery of classic techniques with a modern approach to dining. You will mentor junior cooks, drive menu development, and collaborate with local suppliers to source exceptional, sustainable ingredients.
Responsibility
- Lead the kitchen in authentic Lyonnais dishes, ensuring every plate meets exacting standards.
- Develop seasonal menus that honor regional heritage while incorporating modern techniques.
- Oversee daily kitchen operations, prep, mise en place, and line service to ensure smooth service.
- Manage inventory, food costs, and waste reduction with a focus on sustainability.
- Coach and supervise cooks, line cooks, and apprentices to elevate skills and teamwork.
- Ensure strict adherence to HACCP, sanitation, and safety policies across all stations.
- Collaborate with local suppliers to source authentic ingredients and maintain quality.
Qualification
- Minimum 5 years of leadership experience in traditional or classical cuisine settings.
- Strong knowledge of Lyonnais cuisine and French regional specialties.
- Mastery of classic techniques, stocks, sauces, butchery, and plating.
- Proven ability to manage kitchen operations, budgets, and food costs.
- Excellent leadership, communication, and mentorship skills.
- HACCP certification and thorough understanding of food safety standards.
- Fluent in French; professional English is a plus.
