Portland Hearth Collective is seeking a seasoned Head Baker to lead our artisanal bakery operations. You will shape our daily program, mentor a growing team, and uphold our commitment to quality, flavor, and consistency.
In this pivotal role, you’ll collaborate with our pastry and production teams to design seasonal items, optimize production flow, and maintain stringent hygiene standards. Responsibility
- Lead daily production of bread and pastry items with consistent quality and efficiency.
- Develop and refine recipes, scale for production, and incorporate seasonal offerings.
- Mentor, supervise, and schedule baking staff; conduct performance feedback and training.
- Maintain strict hygiene, safety, and HACCP standards across the bakery.
- Collaborate with procurement to manage ingredients, minimize waste, and control costs.
- Oversee quality control, equipment maintenance, and inventory management.
- Partner with management on process improvements to increase throughput and product consistency.
Qualification
- 5+ years of professional baking experience with leadership responsibilities.
- Hands-on expertise in sourdough, laminated doughs, and artisan pastries.
- Proven ability to manage production schedules and scale recipes for demand.
- Strong knowledge of food safety standards and certifications (ServSafe or equivalent).
- Excellent communication, mentoring, and team-building skills.
- Organizational, time-management, and problem-solving abilities in a fast-paced environment.
- Proficiency with recipe documentation, inventory systems, and basic computer skills.
