Responsibility
- Lead daily production planning and ensure on-time delivery of all breads and pastries.
- Maintain consistent quality, texture, and presentation across all products.
- Manage oven scheduling, fermentation timelines, and baking cycles to optimize efficiency.
- Train, supervise, and schedule junior bakers and assistants; foster a positive team environment.
- Monitor ingredient inventory, place orders, and manage waste to maximize yield.
- Ensure strict food safety, sanitation, and HACCP compliance in all operations.
- Collaborate with the Head Pastry Chef on new product development and seasonal offerings.
Qualification
- 3+ years of professional baking experience with artisan breads and pastries.
- Proven leadership and supervisory experience in a bakery or kitchen.
- Expertise in sourdough, laminated doughs, croissants, and baton pastries.
- Knowledge of commercial ovens, proofers, and dough sheeters; ability to troubleshoot equipment.
- Food safety certification (ServSafe or equivalent) and strong sanitation practices.
- Ability to work early mornings, weekends, and stand for extended periods.
- Strong communication, time management, and problem-solving skills.
