Responsibility
- Lead daily kitchen operations for traditional cuisine dishes, ensuring consistency and quality.
- Design and update seasonal menus honoring regional and heritage recipes.
- Train and mentor cooks, line cooks, and pastry assistants; enforce HACCP and safety standards.
- Oversee mise en place, plating, and portion control for a la carte and tasting menus.
- Collaborate with suppliers to source authentic ingredients and maintain cost controls.
- Maintain kitchen cleanliness, equipment maintenance, and inventory management.
- Support service with calm leadership, oversee line during peak hours.
- Uphold hospitality standards, guest interaction, and feedback integration.
Qualification
- Culinary degree or equivalent experience in traditional cuisine, with 5+ years in a professional kitchen.
- Proven track record leading a team in a fine dining or traditional cuisine setting.
- Expertise in classic sauces, butchery, meat and fish preparation, and consistent plating.
- Strong sense of taste, aroma, and seasonal flavor pairing; knowledge of Lyonnais cuisine is a plus.
- Fluent in French; proficient English is a plus; excellent communication and leadership skills.
- Allergen awareness, HACCP certification, and food safety best practices.
- Ability to work flexible hours, long service, and high-pressure environment.
