Maison des Saveurs, a premium traditional restaurant in Lyon, seeks a seasoned Head Chef to lead our kitchen and celebrate authentic Lyonnais cuisine. The ideal candidate combines mastery of traditional techniques with creative menu development, excellent leadership, and a passion for seasonal, locally sourced ingredients.
In this role you will shape the guest experience through bold yet refined dishes, maintain impeccable quality and consistency, mentor a dedicated culinary team, and collaborate closely with service staff to deliver a seamless dining experience.
Responsibility
- Lead kitchen operations and ensure high-quality execution, plating, and timely service.
- Develop seasonal menus rooted in Lyonnaise tradition while embracing contemporary influences.
- Source and manage relationships with local producers and suppliers.
- Oversee menu costing, inventory management, portion control, and waste reduction.
- Maintain HACCP standards, food safety, sanitation, and regulatory compliance.
- Recruit, train, mentor, and schedule kitchen staff; foster a positive, high-performance culture.
- Collaborate with the front-of-house team to optimize guest experience and satisfaction.
- Maintain kitchen organization, equipment upkeep, and cleanliness to the highest standards.
Qualification
- Minimum 5-7 years of professional kitchen experience; prior Head Chef or Sous Chef leadership preferred.
- Expertise in traditional French cuisine with a strong focus on Lyonnais specialties.
- Proven track record in menu development, recipe design, costing, and profitability.
- Formal culinary training or degree; deep knowledge of food safety and HACCP principles.
- Strong leadership, communication, and team-building skills; ability to mentor and develop staff.
- Fluent in French; English proficiency is a plus.
- Ability to thrive in a fast-paced, high-volume environment with a calm demeanor.
