Join our acclaimed traditional cuisine team at Heritage & Hearth Kitchen in San Francisco. We seek a skilled Chef de Partie to help preserve and elevate authentic regional dishes using seasonal ingredients.
This role focuses on delivering high-quality, heritage-inspired plates with modern technique. You will collaborate with the Head Chef to design menus that celebrate cultural flavors while maintaining consistency and excellence across service.

Responsibility
- Prepare and execute traditional dishes with authenticity, precision, and flair.
- Maintain mise en place for your station and ensure consistent plate presentation.
- Lead line cooks and assist with training, coaching, and performance feedback.
- Collaborate with the Head Chef on menu development and seasonal specials highlighting heritage ingredients.
- Uphold food safety, sanitation, and HACCP compliance across all prep and service.
- Monitor inventory, portion control, and waste reduction to maximize profitability.
- Maintain clear communication with front-of-house to ensure guest satisfaction and timely service.
- Mentor junior staff, foster teamwork, and promote a culture of culinary excellence.
Qualification
- Minimum 4 years of experience in traditional or regional cuisines, preferably in fine dining.
- Formal culinary education or a recognized apprenticeship.
- Proven leadership and ability to manage a high-volume kitchen with composure.
- Strong knowledge of food safety, sanitation, and HACCP standards.
- Excellent palate, plating skills, and attention to detail.
- Willingness to work evenings, weekends, and holidays as required.
- Strong communication and teamwork; bilingual ability is a plus.
