We are seeking an experienced Lead Baker to join our premium bakery in the heart of San Francisco. Responsibility
- Lead daily production, ensuring consistent quality across breads, pastries, and desserts.
- Plan and manage fermentation, proofing, shaping, and baking schedules.
- Develop and refine recipes; adapt menus to seasonality and dietary needs.
- Train, supervise, and schedule junior bakers; provide ongoing feedback and coaching.
- Maintain HACCP, food safety, sanitation, and inventory controls; monitor waste.
- Collaborate with pastry and culinary teams on product development and service readiness.
Qualification
- 5+ years of bakery experience, including leadership in a fast-paced environment.
- Proficiency with artisanal breads such as sourdough; laminated dough skills a plus.
- Strong knowledge of fermentation, dough handling, temperature control, and proofing.
- Experience operating commercial ovens and managing high-volume production.
- Food safety certification (ServSafe or local equivalent).
- Excellent leadership, communication, and team-building skills.
- Flexibility to work early mornings, weekends, and holidays as required.
