Responsibility
- Lead and mentor a high-performance culinary team, ensuring daily execution of all service periods.
- Design and iterate seasonal menus and tasting menus aligned with concept and guest expectations.
- Maintain rigorous quality standards, portion control, and plating aesthetics across all dishes.
- Oversee menu costing, procurement, vendor relationships, and inventory to optimize profitability.
- Uphold food safety, HACCP, and sanitation standards; manage certifications and inspections.
- Collaborate with the restaurant leadership on guest experience, special events, and culinary programs.
- Coach and develop junior chefs, conduct performance reviews, and succession planning.
Qualification
- Minimum of 8-10 years of kitchen leadership experience in fine dining or Michelin-caliber environments.
- Proven track record in menu development, costing, and kitchen operations.
- Formal culinary training or equivalent professional experience; J- or Michelin-starred background a plus.
- Strong leadership, communication, and cross-functional collaboration skills.
- Expertise in food safety, HACCP, sanitation, and allergy/intolerance management.
- Ability to work under pressure in a fast-paced environment; flexible scheduling including evenings and weekends.
- Assets: knowledge of multiple cuisines, pastry expertise, and experience with sustainability initiatives.
