Responsibility
- Lead all kitchen operations ensuring consistency, quality, and timely execution across all service periods.
- Develop seasonal and tasting menus in collaboration with the culinary team, including recipe testing and plate presentation standards.
- Maintain strict food safety, HACCP compliance, and sanitation practices to protect guests and staff.
- Recruit, train, and develop cooks and sous-chefs; cultivate a constructive, high-performance kitchen culture.
- Oversee procurement, inventory management, and relationships with purveyors to optimize cost and quality.
- Collaborate with front-of-house leadership to curate the guest experience and manage special events, banquets, and tasting menus.
- Monitor portion control, waste reduction, and cost controls to drive profitability without compromising quality.
Qualification
- 8+ years of progressive leadership experience in upscale/fine-dining kitchens.
- Culinary degree or equivalent professional training from a reputable program.
- Proven track record in menu development, seasonal tasting menus, and cost optimization.
- Exceptional leadership, communication, and team-building abilities; ability to inspire high performers.
- Deep knowledge of food safety, HACCP, sanitation standards, and regulatory compliance.
- Ability to thrive in a fast-paced, high-volume environment with flexible scheduling and long hours.
- Strong vendor relations, procurement skills, and inventory management proficiency.
