Portland Hearth Bakery is seeking a skilled Head Baker to lead our artisan production in Portland, Oregon. Our bakery is known for sourdough, pastries, and seasonal specialties using locally sourced ingredients. As Head Baker, you will oversee daily production, mentor a team, maintain quality, manage recipes, and collaborate with the culinary team to design new offerings. Responsibility
- Lead and supervise daily baking operations for breads and pastries ensuring best-in-class quality and consistency.
- Develop and refine dough formulas, proofing schedules, fermentation profiles, and baking times.
- Oversee temperature, humidity, and oven calibration; ensure HACCP and food safety standards.
- Train and mentor junior bakers; schedule shifts and allocate tasks for peak production.
- Collaborate with the pastry and culinary teams on seasonal menus and test new recipes.
- Maintain inventory of ingredients and packaging; coordinate with suppliers and vendors.
- Maintain sanitation standards and ensure compliance with health regulations.
Qualification
- 3+ years of professional baking experience with focus on artisan breads and pastries.
- Proven leadership experience in a bakery or high-volume kitchen.
- Strong knowledge of sourdough, preferment, and lamination techniques.
- Excellent time management, multi-tasking, and problem-solving skills.
- Food handlers/ServSafe or equivalent certification; knowledge of HACCP.
- Ability to work early mornings, weekends, and holidays as required.
- Strong verbal and written communication; collaborative team player.
