Responsibility
- Lead daily production and ensure on-time delivery of all baked goods
- Develop and adjust recipes for seasonal menus and client requests
- Manage fermentation schedules, proofing, and oven loading
- Train, supervise, and motivate baking staff; schedule shifts
- Maintain quality control and food safety compliance
- Optimize waste reduction and inventory management
- Collaborate with leadership on menu planning and pricing strategies
Qualification
- Minimum of 5 years in professional baking with at least 2 years in a supervisory role
- Proficient in artisanal bread, sourdough, pastries, and laminated doughs
- Strong understanding of fermentation, temperature control, and proofing
- Experience with HACCP, sanitation, and food safety standards
- Excellent leadership, communication, and mentoring skills
- Ability to manage high-volume production and maintain product consistency
- Food handler's certification and basic knowledge of allergens and cross-contamination
