Join Crust & Crumble Bakery, a premium neighborhood bakery in Portland known for artisan breads, flaky croissants, and seasonal pastries. We are seeking a driven Pastry Chef / Bakery Production Lead to elevate our production, mentor a small team, and ensure consistent quality across all products.
In this role you will oversee daily pastry operations, collaborate with the head baker on menu development, and implement efficient processes to scale as demand grows. Responsibility
- Lead daily pastry production including laminated doughs, croissants, danishes, tarts, cookies, and custom cakes.
- Plan and supervise staff schedules, train bakers, and uphold food safety and HACCP standards.
- Maintain quality control through precise portioning, temperatures, and bake times.
- Develop seasonal items, test recipes, and contribute to menu costing and profitability.
- Manage inventory, order ingredients, receive deliveries, and minimize waste.
- Ensure sanitation, equipment maintenance, and safe operation of the production area.
- Collaborate with the purchasing team and head baker to scale production for events and wholesale orders.
Qualification
- 3+ years of bakery or pastry kitchen experience, with demonstrated leadership or supervisory responsibilities.
- Expertise in laminated doughs (croissants), choux pastries, tarts, pastries, and cake assembly.
- Strong understanding of recipe scaling, yield, pricing, and cost control.
- Food safety certification (ServSafe or equivalent) and current sanitation practices.
- Excellent organizational and communication skills; capable of training and mentoring staff.
- Ability to work early mornings, weekends, and holidays as required; ability to lift up to 50 lbs.
