You will translate menu concepts into operational reality, establishing standard operating procedures, production calendars, and performance benchmarks. Responsibility

  • Lead and supervise all central kitchen production activities to ensure timely, high-quality outputs.
  • Develop production plans, scheduling, and capacity management to optimize resources.
  • Maintain HACCP, GMP, sanitation, and safety programs across all shifts.
  • Manage inventory, portion control, waste reduction, and cost control while coordinating with procurement.
  • Coach, develop, and manage kitchen staff; recruit, train, and retain top talent.
  • Collaborate with culinary teams to translate menus into scalable, repeatable production processes.
  • Monitor equipment performance, maintenance planning, and energy efficiency to minimize downtime.
  • Provide regular reports on production KPIs, quality, and continuous improvement initiatives.

Qualification

  • Bachelor's degree in Culinary Arts, Food Technology, or a related field; or equivalent leadership experience in a central kitchen.
  • Proven track record as a Production Head/Manager in a high-volume kitchen or central facility.
  • Strong knowledge of food safety standards (HACCP, GMP) and regulatory compliance.
  • Excellent leadership, coaching, and team-building abilities with a focus on development and retention.
  • Experience in production planning, inventory management, cost control, and supplier coordination.
  • Strong organizational skills, problem-solving mindset, and ability to thrive in a fast-paced environment.
