Responsibility
- Lead and manage daily baking and pastry production, ensuring top quality and on-time delivery.
- Develop and refine recipes for breads, croissants, laminated pastries, and seasonal desserts.
- Supervise, train, and schedule a small team of bakers; conduct performance feedback.
- Maintain strict food safety, HACCP compliance, and cleanliness standards across the bakery.
- Monitor inventory, order ingredients, and minimize waste through precise forecasting.
- Collaborate with management on menu planning and seasonal promotions.
- Maintain and calibrate baking equipment; oversee routine maintenance and safety checks.
- Foster a positive, fast-paced bakery culture focused on quality and customer service.
Qualification
- 5+ years of professional baking experience, with at least 2 years in a lead or supervisory role.
- Expertise in artisan bread (sourdough, rye) and laminated pastries (croissants, danishes).
- Strong knowledge of dough development, fermentation, temperature control, and proofing methods.
- Proven ability to manage a team, train staff, and maintain high production standards.
- Excellent organizational and time-management skills; ability to work early morning shifts.
- Commitment to food safety, HACCP principles, and sanitation practices.
