Responsibility
- Lead the kitchen in planning and executing traditional dishes with authenticity and precision.
- Develop seasonal menus that highlight regional heritage ingredients.
- Coach, mentor, and supervise cooks and line cooks to ensure consistent quality.
- Maintain rigorous food safety, HACCP, and sanitary standards across all stations.
- Source authentic ingredients from vetted suppliers and manage inventory and waste.
- Oversee plating, presentation, and portion control for all service periods.
- Collaborate with front-of-house teams to ensure seamless guest experiences.
- Monitor costs, labor, and productivity to optimize profitability while upholding standards.
Qualification
- Minimum 5 years of experience in traditional cuisine or regional heritage kitchens.
- Formal culinary training or equivalent professional certification.
- Fluent in English; knowledge of additional languages is a plus.
- Strong leadership, communication, and team-building skills.
- Deep knowledge of regional techniques, ingredients, and sourcing.
- Proven track record in menu development and training staff.
- Ability to thrive in a fast-paced, high-volume environment.
- Flexibility to work nights, weekends, and holidays as required.
