We seek a seasoned Traditional Cuisine Chef to lead authentic regional dishes with mastery, warmth, and leadership. You will curate seasonal menus, train and mentor a talented team, manage premium supplier relationships, and ensure impeccable plating and hospitality standards in a high-volume, refined setting.
Responsibility
- Lead the preparation and execution of traditional Lyonnaise and regional dishes with authenticity and consistency.
- Design seasonal menus that honor culinary heritage while appealing to contemporary palates.
- Direct and mentor kitchen staff, fostering a culture of excellence, safety, and teamwork.
- Oversee sourcing of high-quality ingredients from trusted regional suppliers.
- Maintain rigorous food safety, hygiene, and waste management standards (HACCP).
- Collaborate with front-of-house to deliver exceptional guest experiences and presentation standards.
- Supervise portion control, plating, and quality control to ensure consistency across service.
Qualification
- 5+ years of professional kitchen experience with a focus on traditional cuisine and regional specialties.
- Mastery of classic culinary techniques, knife skills, and plating finesse.
- Proven leadership experience in a busy kitchen; ability to train and develop staff.
- Strong knowledge of food safety regulations; HACCP certification preferred.
- Fluency in French; English proficiency is a plus.
- Creative, detail-oriented, and passionate about preserving culinary heritage.
- Flexible schedule with ability to work weekends and holidays as needed.
