Join our team at NOLA Heritage Kitchen to preserve and elevate traditional Louisiana and regional cuisines. We are seeking a seasoned Traditional Cuisine Chef to lead menu development, training, and day-to-day kitchen operations. This role blends classic techniques with modern hospitality, delivering authentic dishes that honor our culinary heritage while delighting today's guests.
As a leader in our kitchen, you will mentor staff, create seasonal menus, control costs, and ensure uncompromising quality, consistency, and safety.
Responsibility
- Lead daily kitchen operations to ensure authentic preparation, quality, and efficient service.
- Develop and refine traditional menu items and seasonal specials that celebrate regional flavors.
- Maintain HACCP, food safety, and sanitation standards across all stations.
- Recruit, train, and supervise culinary staff; set schedules and evaluate performance.
- Manage procurement, inventory, and cost control to maximize profitability without compromising quality.
- Collaborate with front-of-house to ensure exceptional guest experience and consistent plating.
- Mentor junior chefs and apprentices, fostering skill development and career growth.
Qualification
- 5+ years of culinary experience in traditional cuisines; Louisiana or Southern cuisine preferred.
- Culinary degree or equivalent certification from an accredited program.
- Proven leadership and team management in a busy, high-volume kitchen.
- Strong knowledge of HACCP guidelines, sanitation, and food safety regulations.
- Exceptional palate with ability to balance authenticity and refined plating.
- Excellent communication, organization, and problem-solving skills.
- Flexible schedule, including weekends and holidays; ability to work under pressure.
- Fluency in English; bilingual abilities in French or Creole are a plus.
