In this role, you will collaborate with culinary leadership to develop recipes, manage portion controls, ensure quality, and maintain high standards of sanitation in a fast-paced environment.
Responsibility
- Lead the preparation and presentation of authentic traditional dishes with a focus on quality and consistency.
- Design and update seasonal menus reflecting regional heritage while controlling costs.
- Train, mentor, and manage kitchen staff; enforce safety, sanitation, and HACCP standards.
- Oversee inventory, ordering, and supplier relationships to secure authentic ingredients.
- Collaborate with head chef on recipe development and tasting sessions.
- Monitor kitchen workflow to optimize speed and minimize waste.
- Maintain compliance with health regulations and internal quality benchmarks.
Qualification
- 5+ years of professional kitchen experience, with a strong focus on traditional cuisine.
- Proven track record in menu development and recipe adaptation for seasonal ingredients.
- Formal culinary training or equivalent apprenticeship; certification in food safety.
- Excellent leadership, communication, and teamwork skills.
- Strong palate for balanced seasoning and authenticity; knowledge of regional techniques.
- Ability to work across shifts including evenings and weekends.
- Experience with cost control and portioning to maximize profitability.
