Responsibility
- Lead and mentor a kitchen brigade to execute traditional dishes with precision and artistry.
- Design seasonal menus that showcase regional ingredients and time honored techniques.
- Ensure quality, consistency, and presentation across all courses; maintain mise en place and kitchen flow.
- Oversee inventory, ordering, and relationships with local suppliers for authentic ingredients.
- Enforce HACCP, safety, and sanitation standards; maintain a clean and organized kitchen.
- Monitor food costs, portion control, and waste reduction to maintain profitability.
- Collaborate with front of house to create memorable dining experiences and tighten service standards.
- Train and develop junior chefs, apprentices, and kitchen staff through hands on coaching.
Qualification
- Minimum 5 years of experience in traditional cuisine, preferably French regional cooking.
- Formal culinary education or equivalent professional training.
- Strong knowledge of seasonal ingredients and classic techniques.
- Proven leadership and team management skills; ability to work under pressure.
- Excellent palate, presentation skills, and attention to detail.
- Fluent in French; English proficiency is a plus.
- Understanding of HACCP, food safety, and sanitation best practices.
- Availability to work evenings, weekends, and holidays as required.
