Responsibility
- Lead daily kitchen operations focused on traditional dishes, ensuring consistency, quality, and efficiency.
- Develop and refine menus featuring regional classics, seasonal ingredients, and memory-evoking favorites.
- Source authentic ingredients with trusted suppliers; manage cost, inventory, and waste reduction.
- Train and mentor culinary staff in traditional techniques, plating, and food safety.
- Ensure HACCP compliance, sanitation, and safety standards across all prep and service stages.
- Collaborate with front-of-house on service flow, timing, and wine/beer pairings with regional cuisines.
- Maintain precise portion control, plate presentation, and adherence to established recipes.
Qualification
- Culinary degree or equivalent professional training in traditional or regional cuisines.
- 5+ years of progressive experience in traditional or regional cuisines with leadership responsibilities.
- Deep knowledge of regional ingredients, authentic flavors, and classic preparation methods.
- Proven ability to lead, coach, and develop a cohesive kitchen team.
- Strong palate with refined tasting skills and attention to detail.
- Proficiency in HACCP, food safety, inventory management, and cost control.
- Willingness to work evenings, weekends, and holidays as required; excellent adaptability in a fast-paced kitchen.
- Fluency in English; valid work authorization to work in the United States.
