Responsibility
- Plan, prepare, and cook daily meals (breakfast, lunch, dinner, snacks) for all crew and officers in accordance with shipboard menus, dietary needs, and health standards.
- Ensure cleanliness and hygiene of the galley, pantry, and mess areas in compliance with maritime regulations.
- Manage galley inventories, including ordering provisions, monitoring stock levels, and minimizing wastage.
- Supervise and train galley assistants or utility personnel as required.
- Create balanced, nutritious, and varied meal plans to boost crew morale and maintain health standards.
- Maintain food safety, proper storage, and handling practices at all times.
- Collaborate with ship master/crew on special nourishment requests or religious dietary requirements.
- Complete regular reports, documentation, and inventory logs as required by company and international maritime standards.
Qualification
- Proven experience as Chief Cook or Cook on board general cargo vessels or similar merchant ships.
- Relevant maritime culinary certifications; updated Basic Safety Training (BST) and Ship Cook Certificate preferred.
- In-depth knowledge of food handling, hygiene standards, and galley operations aboard ships.
- Ability to manage budgets, provisions, inventory control, and menu planning.
- Passion for cooking and ability to cater to diverse international crews.
- Strong communication and leadership skills; ability to train and oversee galley staff.
- Physically fit and able to work in a fast-paced, demanding shipboard environment.
- Valid Seafarerβs Book and other required maritime documents (Philippine and international standards).
