Responsibility
- Lead daily production of artisan breads and pastries, ensuring consistency and high standards.
- Develop and refine sourdough, yeasted breads, and seasonal specialties with a focus on flavor and texture.
- Plan production schedules, manage FIFO inventory, and control waste to maximize efficiency.
- Mentor, train, and schedule bakers and assistants; promote a positive, collaborative shop floor culture.
- Uphold HACCP and food safety guidelines; maintain clean, organized workstation and equipment.
- Collaborate with the pastry team to deliver seasonal offerings and cross-department promotions.
- Lead by example in oven management, bake timing, and quality control across all batches.
Qualification
- 3-5+ years as a professional baker with leadership experience in a bakery or patisserie.
- Proven ability to manage teams, delegate tasks, and maintain high morale.
- Strong expertise in fermentation, dough development, and artisan bread techniques (sourdough, levains).
- Food safety certification (ServSafe or equivalent) and solid knowledge of HACCP principles.
- Excellent time management, problem-solving, and ability to thrive in a fast-paced environment.
- Physical ability to stand for long periods, lift up to 50 lbs, and operate baking equipment safely.
- Culinary degree or equivalent hands-on experience; passion for continuous learning.
