  • Plan production schedules, manage FIFO inventory, and control waste to maximize efficiency.
  • Mentor, train, and schedule bakers and assistants; promote a positive, collaborative shop floor culture.
  • Uphold HACCP and food safety guidelines; maintain clean, organized workstation and equipment.
  • Collaborate with the pastry team to deliver seasonal offerings and cross-department promotions.
  • Lead by example in oven management, bake timing, and quality control across all batches.

Qualification

  • 3-5+ years as a professional baker with leadership experience in a bakery or patisserie.
  • Proven ability to manage teams, delegate tasks, and maintain high morale.
  • Strong expertise in fermentation, dough development, and artisan bread techniques (sourdough, levains).
  • Food safety certification (ServSafe or equivalent) and solid knowledge of HACCP principles.

  • Physical ability to stand for long periods, lift up to 50 lbs, and operate baking equipment safely.
