Responsibility
- Lead daily production of artisanal breads, pastries, and laminated doughs with precision and care.
- Maintain recipe integrity, scale formulas, and ensure consistent portion control.
- Schedule oven usage, fermentation timelines, and staff shifts to maximize throughput.
- Train, supervise, and develop a high-performing baking team and interns.
- Uphold food safety, sanitation, and HACCP standards across all operations.
- Collaborate with the Head Pastry Chef on seasonal menus and product development.
- Monitor inventory, supplier relationships, and equipment maintenance to minimize downtime.
Qualification
- 5+ years of professional baking experience with supervisory responsibility.
- Expertise in artisan breads, sourdoughs, croissants, and laminated doughs.
- ServSafe or equivalent food safety certification.
- Strong understanding of production planning, scaling recipes, and quality control.
- Excellent palate, attention to detail, and time-management skills.
- Ability to lead early shifts and weekend coverage as required.
- Culinary degree or apprenticeship in baking/patisserie preferred.
