In this leadership role you will oversee daily kitchen operations, ensure consistency with heritage recipes, and deliver exceptional dining experiences. You will collaborate with front of house to optimize plating and timing, manage inventory and vendor relations, and guide a high performing culinary team toward excellence in every plate.

Responsibility

  • Lead daily kitchen operations ensuring consistency with traditional recipes and seasonal ingredients.
  • Develop and refine menus that honor heritage while meeting guest expectations in a contemporary setting.
  • Manage kitchen staff, schedule, training, and performance feedback.
  • Enforce food safety, HACCP, and sanitation standards across all stations.
  • Monitor inventory, control costs, and build relationships with local vendors and farmers.
  • Collaborate with front of house to ensure perfect plating, timing, and guest satisfaction.
  • Mentor junior chefs and apprentices, fostering a culture of craftsmanship and hospitality.

Qualification

  • 8+ years culinary experience with focus on traditional cuisine or regional heritage dishes.
  • Proven track record as head chef or senior sous chef in a high volume kitchen.
  • Formal culinary training from an accredited institution or equivalent apprenticeship.
  • Strong leadership, communication, and team-building skills.
