This is a leadership role in a high-volume, boutique establishment that blends heritage with modern technique. You will mentor cooks, curate seasonal menus, and uphold rigorous standards for quality and hospitality.
Responsibility
- Lead and mentor the culinary team to execute authentic traditional dishes with consistency and flair.
- Design and evolve menus that honor local heritage while embracing seasonal ingredients.
- Oversee kitchen operations, inventory, ordering, and cost controls to optimize profitability.
- Ensure strict sanitation, food safety, and HACCP compliance across all stations.
- Collaborate with service staff to deliver exceptional guest experiences and branding.
- Recruit, train, and develop talent, fostering a culture of excellence and teamwork.
Qualification
- Minimum 5 years of progressive leadership in traditional cuisine with credentialed culinary training.
- Proven track record in menu development, cost management, and supplier relationships.
- In-depth knowledge of Creole, Cajun, or regional Southern cuisine and technique.
- Strong leadership, communication, and mentoring skills.
- Food safety certification and HACCP knowledge required; ServSafe preferred.
- Ability to thrive in a fast-paced, guest-focused environment with attention to detail.
