Responsibility

  • Lead and inspire a talented kitchen brigade in the creation and execution of traditional French dishes with modern flair.

  • Ensure consistent quality, taste, and plate presentation across all service periods.
  • Oversee kitchen operations: cost controls, inventory, par levels, waste reduction, and supplier relationships.
  • Enforce stringent food safety, HACCP, and sanitation practices in line with regulations.
  • Nurture talent through coaching, training, and performance feedback; manage scheduling and staff development.
  • Collaborate with front-of-house to optimize guest experience and respond to feedback with agility.

Qualification

  • Minimum 5-7 years of progressive leadership experience in traditional cuisine, preferably French or European regional menus.
  • Formal culinary training or a degree/diploma from a recognized institution.
  • Proven track record of managing kitchen operations, budgets, and a high-volume service.
  • Strong knowledge of classic French techniques, stocks, sauces, and meat/fish fabrication.
  • Exceptional palate, creativity, attention to detail, and consistency in quality and presentation.
