Responsibility
- Lead and inspire a talented kitchen brigade in the creation and execution of traditional French dishes with modern flair.
- Develop seasonal menus that highlight regional ingredients while maintaining brand standards and portion control.
- Ensure consistent quality, taste, and plate presentation across all service periods.
- Oversee kitchen operations: cost controls, inventory, par levels, waste reduction, and supplier relationships.
- Enforce stringent food safety, HACCP, and sanitation practices in line with regulations.
- Nurture talent through coaching, training, and performance feedback; manage scheduling and staff development.
- Collaborate with front-of-house to optimize guest experience and respond to feedback with agility.
- Maintain equipment, facilities condition, and maintain a safe, organized kitchen environment.
Qualification
- Minimum 5-7 years of progressive leadership experience in traditional cuisine, preferably French or European regional menus.
- Formal culinary training or a degree/diploma from a recognized institution.
- Proven track record of managing kitchen operations, budgets, and a high-volume service.
- Strong knowledge of classic French techniques, stocks, sauces, and meat/fish fabrication.
- Exceptional palate, creativity, attention to detail, and consistency in quality and presentation.
- Excellent communication and leadership skills; fluent in French; English proficiency is a plus.
- Ability to stand for long hours, work evenings, weekends, and holidays as needed.
- Passion for traditional cuisine and a commitment to sustainable sourcing and seasonal ingredients.
