Responsibility
- Prepare and cook hot dishes to specification, ensuring consistency and plating quality
- Maintain mise en place, stock, and workstation organization for the hot line
- Monitor cooking times, temperatures, and portion control to ensure safety and quality
- Adhere to food safety, sanitation, and HACCP guidelines; maintain clean and sanitized surfaces
- Collaborate with chefs and kitchen team to manage high-volume service
- Assist with inventory management and support with ordering for the hot kitchen
- Support training and mentoring of junior kitchen staff and apprentices
- Assist with menu changes and daily specials, providing valuable input on flavor and presentation
Qualification
- Proven experience as a line cook or hot kitchen chef in a professional restaurant or hotel
- Strong knowledge of hot kitchen techniques, sauces, stock, and plating
- Understanding of food safety guidelines (HACCP, local regulations) and sanitary practices
- Ability to work under pressure with speed and accuracy during peak periods
- Excellent communication, teamwork, and time-management skills
- Flexibility to work shifts, including evenings, weekends, and holidays
- Recognized culinary training or certificate is a plus; ability to work with minimal supervision
- Fluent in Indonesian; basic English is a plus
