Golden Hearth Bakery is seeking a passionate Lead Artisan Baker to lead our production team in a fast-paced, artful bakery. You will craft loaves, pastries, and seasonal specialties that delight our discerning customers while mentoring a growing team of bakers. This role blends hands-on baking excellence with leadership, process improvement, and a commitment to quality, consistency, and safety.
As a core member of our culinary leadership, you will help define our daily bake program, ensure top-tier product quality, and collaborate with the front-of-house team to deliver a premium customer experience.
Responsibility
- Lead daily production of bread, pastry, and viennoiserie, ensuring consistency, quality, and on-time delivery.
- Develop seasonal offerings in collaboration with the Head Pastry Chef and Operations Manager.
- Train, mentor, and supervise junior bakers; schedule shifts and monitor performance.
- Oversee inventory, ordering, and relationships with suppliers to minimize waste and control costs.
- Maintain impeccable food safety, sanitation, and HACCP compliance; enforce clean-as-you-go practices.
- Optimize production processes to improve efficiency, reduce waste, and enhance product consistency.
- Collaborate with the cafe and wholesale teams to ensure product presentation and packaging meet brand standards.
- Monitor equipment maintenance and coordinate with vendors for repairs and calibration.
Qualification
- 5+ years professional baking experience with leadership responsibilities in a bakery or patisserie.
- Comprehensive knowledge of bread, laminated doughs, and artisanal pastries; sourdough mastery a plus.
- Proven ability to train and mentor a diverse team; strong communication and delegation skills.
- Excellent time management, planning, and organizational abilities; detail-oriented and batch-traceable.
- Food safety certification (ServSafe or equivalent) and strong sanitation practices.
- Familiarity with HACCP principles and inventory management; experience with cost controls.
- Ability to work early mornings, weekends, and holidays as needed; adaptable and collaborative mindset.
