Responsibility

  • Lead daily production of breads, pastries, and specialty items with a focus on consistency and quality.
  • Develop and refine recipes, fermentation schedules, and baking methods to ensure superior flavor and texture.
  • Plan production schedules to meet daily demand and seasonal promotions.
  • Train, mentor, and supervise junior bakers and production assistants; foster a collaborative team culture.
  • Oversee quality control, portioning, and presentation of all baked goods.
  • Enforce food safety, sanitation, and HACCP standards; maintain documentation and records.
  • Monitor inventory, order raw materials, and manage waste to optimize cost of goods sold.

Qualification

  • Minimum 5 years of professional baking experience in a high-volume, quality-focused bakery or patisserie.
  • Formal culinary or bakery training; degree or certificate preferred.
  • Strong knowledge of artisan bread, sourdough fermentation, laminated doughs, and viennoiserie.
  • Proven leadership, communication, and team-building abilities; capable of mentoring staff.
