Rainier & Co. Artisan Bakery is seeking a passionate Lead Pastry Baker to join our dedicated team in Portland. The candidate will lead production of laminated doughs, desserts, and artisan breads, ensuring quality, consistency, and on-time delivery. This is a hands-on role with leadership responsibilities in a fast-paced, artful bakery environment.

As a leader in our bakery, you will collaborate with the Head Baker on seasonal menus, train junior bakers, and uphold our standards for texture, flavor, and presentation. We celebrate craftsmanship, sustainable practices, and a warm, welcoming guest experience.

Responsibility

  • Lead daily production of pastries, cakes, and breads with focus on laminated doughs, sourdough, and viennoiserie.
  • Train and supervise bakers and apprentices; plan shifts and delegate tasks.
  • Maintain consistency and quality, portion control, and production timelines.
  • Ensure adherence to food safety, sanitation, and allergen controls.
  • Manage inventory, ordering, and waste reduction; forecast ingredient needs.
  • Develop and refine recipes in collaboration with the Head Baker; contribute to seasonal menus.
  • Maintain equipment, calibrate ovens, and monitor maintenance needs.
  • Foster a positive, collaborative kitchen culture and uphold brand standards.

Qualification

  • Minimum 5 years of professional baking experience, with pastry focus.
  • Proven leadership and team management skills; experience running a shift.
  • Expertise in laminated doughs, sourdough, and yeasted pastries.
  • Strong palate, attention to detail, and ability to deliver consistent results.
  • Ability to work early mornings, weekends, and long shifts.
  • ServSafe or equivalent food safety certification preferred.
  • Excellent communication and collaboration skills; bilingual a plus.
