Responsibility

  • Lead daily production of pastries, cakes, tarts, breads, and viennoiserie with precision and consistency.
  • Develop and test new recipes, seasonal menus, and product improvements in collaboration with the Head Baker.
  • Train, supervise, and mentor junior bakers and pastry assistants, fostering a collaborative kitchen culture.
  • Maintain mise en place, batching, and production schedules to meet customer demand and wholesale commitments.
  • Ensure strict adherence to food safety, sanitation, and HACCP protocols.
  • Monitor inventory, waste, and ordering to optimize costs and reduce waste.
  • Oversee quality control, taste testing, and visual presentation across all products.
  • Collaborate with front-of-house and wholesale teams to deliver exceptional guest experiences.

Qualification

  • 5+ years of professional baking, with specialization in pastry and laminated dough.
  • Formal culinary or pastry arts training from an accredited program.
  • Strong sense of taste, creativity, and recipe development ability.
  • Proven leadership experience and ability to train and motivate a team.
  • Excellent organizational skills and ability to manage multiple tasks in a fast-paced environment.
