Responsibility
- Lead and oversee daily culinary operations for traditional dishes, ensuring authenticity and consistency.
- Design and update seasonal menus that honor regional heritage while incorporating contemporary techniques.
- Coach, train, and mentor kitchen staff to uphold high standards of quality, safety, and teamwork.
- Manage food costs, portion control, and supplier relationships to maximize profitability without compromising tradition.
- Oversee food safety, HACCP compliance, and sanitation across all stations.
- Collaborate with front-of-house teams to ensure flawless guest experiences and timely service.
- Document recipes, techniques, and plating guidelines to preserve lineage and enable knowledge transfer.
- Lead special events, tasting menus, and community programs that celebrate traditional cuisine.
Qualification
- Bachelor’s degree in Culinary Arts or equivalent experience in traditional cuisines.
- Minimum 5 years of progressive leadership in kitchens focused on regional, traditional dishes.
- Proven ability to create and execute menus that honor heritage while appealing to contemporary palates.
- Extensive knowledge of classic techniques, ingredients, and regional flavor profiles.
- Strong leadership, communication, and team-building skills.
- Experience managing food costs, inventory, and supplier negotiations.
- Commitment to food safety, HACCP, and sanitation standards.
- Ability to work flexible hours, including evenings, weekends, and events.
