Responsibility

  • Lead the preparation and execution of traditional Peruvian dishes on the main line, ensuring authenticity and consistency.
  • Manage mise en place, quality checks, plating, and portion control to deliver exceptional presentation.
  • Collaborate with the Head Chef on seasonal menus, recipe standardization, and taste panels.
  • Train, supervise, and motivate kitchen staff; uphold safety, sanitation, and HACCP standards.
  • Monitor inventory, assist with ordering, and control food costs while minimizing waste.
  • Maintain equipment, tool hygiene, and deep-cleaning schedules to sustain a pristine kitchen environment.
  • Foster a collaborative culture, provide feedback, and support team development during peak service.

Qualification

  • Minimum 3 years of hands-on experience in traditional Peruvian or Latin American cuisine; senior line cook or chef de partie preferred.
  • Formal culinary training or apprenticeship; strong recipe and technique knowledge.
  • Proven leadership and mentoring ability with a track record of training junior staff.
  • Excellent knife skills and a solid foundation in classic cooking techniques (roasting, braising, sautéing, grilling).
  • Strong knowledge of food safety, HACCP, allergen control, and sanitation practices.
  • Excellent time management, communication, and ability to work under pressure during service.
  • Fluent English; Spanish proficiency is a strong plus; willingness to adapt to local kitchen dynamics.
